Walk into any natural food store in Gainesville and you'll find a wall of honey, manuka from New Zealand, clover from the Midwest, blends from who knows where. But more and more people in Alachua County are skipping the imported stuff and buying directly from local beekeepers like us. Here's why.
1. You Know Exactly Where It Comes From
Our honey comes from our hives in High Springs, Florida period. We don't blend from multiple sources or buy in bulk from honey brokers. When you order from Thy Will Bee Done Apiary, you're getting honey our family harvested from our own bees on our own property. The address on our label is the same address where the bees live. That kind of supply chain transparency is nearly impossible with grocery store honey, where lab testing has repeatedly found mislabeled country-of-origin and adulterated products.
2. Local Pollen for Local Allergies
Many Alachua County residents deal with seasonal allergies from the same plants that are blooming right outside their windows, oak, pine, gallberry, goldenrod, and more. Raw local honey contains trace amounts of pollen from the local flora your bees forage on. Some people find that regular consumption of local raw honey, especially starting a few months before allergy season, helps their body build familiarity with those local pollens. While this isn't a medical treatment, it's been a traditional folk remedy for generations and is a big reason many of our local customers started ordering in the first place.
3. Raw Honey Is a Different Product Entirely
Grocery store honey is almost always heated and ultra-filtered, this makes it clear and shelf-stable but destroys much of what makes honey special. Natural enzymes like diastase and invertase, antimicrobial compounds, antioxidants, trace vitamins and minerals, and the pollen that gives honey its local character are all significantly reduced or eliminated in the pasteurization process. Raw honey like ours retains all of these. It may crystallize over time (that's normal and a sign it's real), and it may look a little cloudy, that's the good stuff.
4. It Tastes Better
We'll be blunt: once you've tasted fresh raw wildflower honey from North Central Florida, store-bought honey tastes flat. The floral complexity from gallberry, saw palmetto, titi, and the wildflower meadows of Alachua County produces a honey with real depth and character. Every batch is slightly different depending on what was blooming at harvest time. Regular customers often tell us they can taste the difference between our spring and summer harvests. That's what terroir means in honey.
5. You're Supporting a Local Family and Local Bees
Honeybees pollinate a huge portion of the food crops and native plants in North Central Florida. Supporting local beekeepers means supporting the hives that do that work. Thy Will Bee Done Apiary is a family operation, every purchase goes directly toward the care of our bees, the expansion of our apiary, and a family deeply rooted in this community. We believe in doing things the right way: naturally, honestly, and with faith. That's not marketing language, it's why we named our business after Matthew 6:10.
