Our Story

A Family Built on Faith and Honey

We're a family-run apiary based in High Springs, Florida, a small spring-fed city in western Alachua County about 30 miles northwest of Gainesville. Our bees work across multiple locations throughout Florida, each one chosen for the native nectar it offers. That range of forage is what gives our honey its variety and depth of flavor.

Our name comes from Matthew 6:10: "Thy kingdom come. Thy will be done in earth, as it is in heaven." That scripture is at the heart of everything we do. We believe in doing things the right way: naturally, honestly, and with faith. From how we keep our bees to how we package your order, we hold ourselves to a standard of care that reflects our values.

Our Hives and Where They Live

We keep hives at four locations across Florida, and each one produces honey with a distinct character tied to the local landscape.

Lake City, FL is our primary gallberry location. Gallberry (Ilex glabra) is a native Florida holly that blooms in spring, and the flatwoods around Lake City are some of the richest gallberry country in the state. Gallberry honey is light in color, mild and clean in flavor, and among the most sought-after Florida varietal honeys. If you've had our lightest, smoothest honey, it likely came from this location.

High Springs, FL is our home base and produces mainly wildflower honey. The area around the Santa Fe River watershed is rich with native blooms throughout much of the year: wild blackberry, titi, tallow, clover, and dozens of seasonal wildflowers. High Springs wildflower honey tends to be golden, complex, and full-flavored.

Paynes Prairie Preserve is one of Florida's most ecologically significant landscapes, and our hives there also produce primarily wildflower honey. The prairie's open meadows and wetland edges support a rotating cast of native flowers that give this honey a bright, floral character.

Venice, FL rounds out our operation with a blend of wildflower and Brazilian pepper honey. Brazilian pepper (Schinus terebinthifolia) is a late-season bloomer that produces a distinctly bold, spicy-sweet honey unlike anything else we harvest. It's polarizing in the best way: people who love it, really love it.

More Than Honey

Beyond raw and creamed honey, we make a full line of bee-based products here in High Springs:

  • Beeswax candles poured in small batches from 100% pure beeswax from our own hives
  • Natural skincare including beeswax lip balms, lotions, and soaps made with simple ingredients
  • Honey sticks and gift sets perfect for local events, school fundraisers, and Florida-made gift baskets
  • Beekeeping supplies for backyard beekeepers across Alachua, Columbia, and Gilchrist Counties

Serving Our Community

We're proud to be part of the High Springs and Alachua County community. We sell locally and ship throughout Florida and the United States. If you're in the Gainesville, High Springs, Alachua, Newberry, Chiefland, or Trenton area, we'd love to be your local honey source. There's something special about knowing exactly which beekeeper raised the bees and which landscape your honey came from.

We also offer humane bee removal services throughout Alachua County. If you have a swarm or established colony on your property, we relocate them to our apiary rather than exterminating them.

Why Local Raw Honey?

Florida's climate and native flora make local honey genuinely different from store-bought honey. Raw North Florida honey contains local pollen from the specific plants in your region. It also supports local pollinators and local agriculture. When you buy from Thy Will Bee Done Apiary, you're supporting a small family business, a sustainable beekeeping operation, and the health of Florida's native bee population.

Thank you for choosing local. From our hive to your home, with faith, care, and gratitude.
