Raw Gallberry Honey 1 lb - Unfiltered Florida Honey

Raw, unfiltered Gallberry Honey in a 1 lb jar from our family apiary in High Springs, Florida. Gallberry honey is harvested from the Gallberry plant (Ilex glabra), a native Florida holly found in the wetlands and scrub areas of North Florida. It is one of the most distinctive monofloral honeys in the state: bold, amber, and rich with a flavor profile that is immediately different from wildflower varieties. Raw and unfiltered means no commercial processing, no added sugar, no heat treatment. The natural pollen, enzymes, and beneficial properties remain intact exactly as the bees produced it.

We are Thy Will Bee Done, a faith-based, veteran-owned family business from High Springs, Florida. Our Gallberry honey comes from the same region where we keep our hives. Spencer started this company at 15 when he took photos of his dad's honey in AP Photography at Buchholz High School and posted them online. His dad, Sergeant First Class Dorosheff, raised bees for years and served 26 years in the United States Army. Over 20,000 families nationwide have trusted our honey since our first sale on April 6th, 2020. This jar is what started everything.
